Finely fruity, mineral, juicy, and with a long finish. The grapes are ripened for a comparatively long time, resulting in a pleasantly mild acidity. The long bottle fermentation on the lees gives elegance and protects against oxidation – thus creating a noble sparkling wine with very little added sulfur!
Flavors of sweet black cherry and forest berries, as well as the coffee aromas so typical of the winery, delight, as do herbal and ethereal notes. On the palate, firmly interwoven sour cherry with Chianti-typical acidity, which, with the fruit and soft tannin, does not allow any harshness to emerge. Incredibly good balance between all components. Fine-grained tannins make the wine astonishingly approachable now, but it is also suitable for aging.
The skins of Pinot Grigio grapes also contain some red pigments. Before pressing, the grape skins and juice macerate cold for 20 hours, which not only gives this extraordinary Spumante its subtle colour, but also its exciting aroma and a little more power and volume. On the nose, a hint of liquorice and gooseberry, on the palate, plenty of fruit such as redcurrant and grapefruit. Irresistible!
