Farm Shop & Bistro
The playground is open during Bistro & Farm Shop opening hours:
Tuesday to Friday: 10:00 to 18:00 and Saturday 10:00 to 17:00
The farm shop and bistro are closed on Mondays, Sundays, and public holidays.
Also open for the Spring Festival around the farm shop: 10.05. 10:00 - 16:00

The Hofküche is largely barrier-free. Most of the seating is at ground level and wheelchair accessible.
On the farm, we have various ground surfaces. In addition to asphalt paths, we also have cobblestones and sand paths. Wheelchair users should preferably explore the farm accompanied.
There are no vacation apartments or rooms on the farm.
However, all holders of the Landvergnügen annual vignette are cordially invited to stay overnight on our farm with their van, motorhome, or caravan. Since space is limited, we kindly request prior registration at 04626 – 18 58 295 or hofkueche@backensholz.de.
Sustainability
All our operations are part of Bioland and work according to their strict guidelines.Here you can learn more about our growing association.
We try to implement the topic of "sustainability" as well as possible and to continuously improve it.
Since the beginning of the 2000s, we have had a biogas plant that supplies all parts of the farm with heat. In addition, we operate a photovoltaic system with a total output of 200KW on our farm.
In the cheese dairy, we use sustainable jute cooling packaging in the summer months, and the cardboard boxes for the packages consist of 30% grass paper.
We have also built our own natural sewage treatment plant for the farm kitchen. Here, the faeces are processed into humus with straw. The process heat is directed into a greenhouse.

Homemade chutneys, sauces and jams, meat from our own cattle, a large selection of wines, gift baskets, deli items, special spices, pickled vegetables, salamis and beautiful kitchen items such as boards, knives and seasonal gift ideas.
Yes and no.
You are very welcome to come with a larger group and celebrate your birthday, wedding anniversary, or a christening. However, we cannot accommodate special food requests or extend our opening hours.
Your visit and the food options will be based on our bistro menu and opening hours. We are also happy to put together a varied buffet from the bistro menu, so everyone can choose what they like!

Country Life
Yes, you are largely free to move around the farm premises. We only ask that you avoid private areas (houses, gardens). Otherwise, you are welcome to walk around the farm premises and look at everything.
Our cows and calves are always happy to receive visitors.
Dogs are generally allowed. However, as we have two free-roaming farm dogs (Vitus & Bella), please always keep an eye on your dog and do not let it roam freely on its own.
Farm Tour
We will show you the entire farm: milking parlors, cows, calf boxes and stables, biogas plant, as well as the farm shop and farm kitchen. If you are particularly interested in a specific topic, please let us know in good time. Then we can prepare ourselves specifically for it.
Please note that for hygiene reasons we cannot offer a cheese dairy tour.
A farm tour takes approximately 1.5 hours. If participants have many questions, a farm tour can also take longer.
Partially/Partially. Some paths are paved with cobblestones, others are unpaved. Participants should be reasonably steady on their feet when walking. Wheelchair users should be accompanied for safety – in that case, a guided tour of the courtyard is not a problem.
Please dress appropriately for the weather – farm tours will take place even in the rain. We also recommend sturdy and robust footwear.
Up to 30 people can participate in a farm tour. Larger groups may be divided into two smaller groups. The minimum number of participants is 10 people.
A farm tour costs a flat rate of €150 for a group size of 10-30 participants.

As a rule, farm tours take place during the week from Monday to Friday. Weekend farm tours are rare and only possible by arrangement.
Cheese
At Backensholz, we produce semi-hard cheese, semi-firm cheese, and hard cheese.
The different varieties are mainly distinguished by their water content. The more water remaining in the cheese mass, the softer the texture.
A semi-hard cheese can still be somewhat squashed with your hands; it is pleasantly soft and creamy. A semi-firm cheese is already a bit firmer, and a hard cheese is significantly firmer – this type of cheese is particularly suitable for grating or with a good red wine.
The soft cheeses from Urstrom (also in our range) are aged for a few weeks. The "oldest" cheese, however, is aged for over 14 months (Deichkäse Gold).
Raw milk cheese is a cheese made from unheated (raw) milk, i.e. not pasteurised.
It is the result of traditional craftsmanship that requires particular care and attention. We give the cheese the opportunity to breathe and mature in its natural rind, thereby gaining fragrance and aroma. Flavours that reflect nature are best found in raw milk cheeses.
Hygiene in the stable is an indispensable basis for the production of raw milk cheeses.
The freshly milked milk is not heat-treated, but remains "raw" - with all its good and natural components. Additives such as saltpetre, calcium chloride or other preservatives are NOT used. Raw milk cheeses are living cheeses because the local biodiversity of the meadows and pastures is reflected in their aroma.
Traditional cheesemakers emphasise the local character through a finely tuned rind treatment, using wines and natural cheese cultures that enhance the taste. The slowly ripened raw milk cheeses, refined with exquisite essences, are a culinary delight. Raw milk cheeses are the kings among cheeses.

Yes, all Backensholzer cheeses can be eaten with the rind!
Because all our cheeses have a natural rind. This means that no unnatural substances are used.
A natural rind is a naturally grown rind that has been treated with beneficial molds and bacteria, such as red smear and white mold. This flora is "inoculated" onto the cheese by the cheesemaker – for artisanal cheeses, this is done by hand-wiping. The younger a cheese is, the more often this process needs to be repeated to prevent it from drying out and to allow the desired flora to establish itself. In most cases, a slightly salty solution is used and enriched with the desired molds or bacteria.
A natural rind grows on its own and is only maintained by us. Red-smear cheeses include cheeses such as Hofkäse or Husumer. Here, the bacterium "brevibacterium linens" is applied, which provides the intense reddish color and a very aromatic rind.
Since all our cheeses have a natural rind, there may be variations in appearance or texture.
Yes, you can freeze all our cheeses. However, you must expect significant changes in taste.
It is best to enjoy the cheese before you have to freeze it.
If a white fluff forms on the cut surface, you don't need to worry! This is the white mold that also grows on the rind.
Our cheese prefers a cool and dark environment. The vegetable drawer of the refrigerator is ideal as it experiences minimal temperature fluctuations. Hard cheese is best kept in our cheese paper or loosely wrapped in cling film. Soft cheese needs to breathe, so we recommend perforated cheese paper or a fresh-keeping container with a valve.
To coax out every subtle flavor and aroma from the cheese, we recommend taking it out of the refrigerator about an hour before serving. Cooling is essential for its shelf life, but the taste is best at room temperature.
Shipping
We ship your orders from Monday to Thursday.
We try to ship all orders received by Thursday morning, 09:00 AM, in the same week. Orders received after that will be shipped the following week.
During peak times, for example before holidays, shipping may take longer. Our tip: Order your cheese well in advance of holidays!
We ship your cheese with DHL.
As soon as we create the shipping label, you will receive an email from DHL with the tracking number. You can use this to track at any time whether the package has already left our farm and where your cheese order is located.
During the summer months, we use sustainable cooling packaging. During the winter months, no extra cooling is necessary. If you expect a very long delivery time or want to be on the safe side, you can voluntarily add cooling packaging in winter.
Shipping costs are €6.90. For orders over €75, delivery is free.
There is no minimum order value.
While we do operate according to circular economy principles, you unfortunately cannot return the jute bags to us. For hygiene reasons, we are not allowed to reuse them. We source them from Kompackt©.
However, you are welcome to give the cool packaging a new purpose: for example, it can also serve as winter protection for roses in the garden. Or why not try creating a cozy bed for your pet.
You can either freeze the cool packs and reuse them for up to a year, or dispose of them easily with household waste.
